Less of an article, more of "a coffee table book". A masterly piece of work. There is no such thing as "Chinese" food. China is "where the one country, one cuisine model goes to die". Even the "Big Eight" of culinary styles — Cantonese, Sichuan, Hunan, Jiangsu, Zhejiang, Fujian, Shandong, and Anhui — overlooks most of the country. Impossible to read without becoming very hungry (28,000 words)
